1 Each Cucumber, rinsed and diced
1 Tablespoon Extra Virgin Olive Oil
2 Tablespoons White Distilled Vinegar or Apple Cider Vinegar
1/4 Cup Onion, diced
4 Each Fresh Mint Leaves, rinsed and chopped
Salt (to taste)
Ground Black Pepper (to taste)
In a medium serving dish add all ingredients. Toss and refrigerate 2 hours.
