2 Bunches Beet Green Tops, Wash well do not dry. Tear off the leaves and chop stems thinly
1 Clove Garlic, sliced thin
1/4 Teaspoon Onion Powder
2 Tablespoons Tomato Paste
1/4 Teaspoon Sea Salt
1/4 Teaspoon Pepper
2 Tablespoons Chicken Broth or Water, Substitute vegetable broth for vegetarian.
1. In a large skillet over medium heat – heat oil add garlic and cook 1 minute stirring constantly until edges are golden.
2. Add tomato paste, water onion powder, pepper, and beet stems. Cook while stirring for about 2 minutes until tender.
3. Add beet leaves and cook another 1-2 minutes stirring frequently.
