If you love hard boiled eggs your going to love these delicious pickled eggs.
1. Fill medium size pot with cold water, add 8 eggs and bring to a slow boil. Once water is boiling cook about 5 minutes. Peel, rinse to remove any small shell pieces and set aside.
2. Refer to Roasted Beets, changing to only roast 1 bunch of beets. In 3 large mason jars divide beets evenly, and add 2-3 eggs to each jar and set aside.
3. Refer to Pickled Beets for recipe on vinegar brine. And follow recipe. Then divide eggs between the jars. Lid each jar and refrigerator at least 2 hours.
