This recipe is a great covered dish to bring to any affair, or serve as a side to accompany any sandwich, burger or entree.
1/2 Package Frozen Tortellini (16 Oz. Package), Prepared to package directions. Cooled under cold water
12 Each Green Olives With Pimentos, drained and sliced in half
12 Each Black Pitted Olives, drained and sliced in half
1/4 Cup Cucumbers, washed, peeled or unpeeled, sliced and then quartered
1 Each Plum Tomatoes, washed, sliced and then quartered
4 Slices Green Bell Pepper, washed, cored and seeds removed, sliced then cut slices into 3rds.
4 Slices Red Bell Pepper, washed, cored and seeds removed, sliced then cut slices into 3rds.
3 Slices Onion, (about 2 Tablespoons), peeled, sliced and quartered
1/4 Cup Italian Dressing
2 Teaspoons Red Wine Vinegar
1 Tablespoon Grated Parmesan and Romano Cheese
Salt and Pepper, to Taste.
3 Tablespoons Fresh Parsley, optional, roughly chopped
4 Each Fresh Basil Leaves, optional, roughly chopped
1. Mix all ingredients in a mixing bowl. Mix until well blended.
2. Refrigerate at least one hour in airtight container prior to servings. (Up to 1 week)
