These juicy Kabobs are great for a light dinner or lunch. Use metal skewers and cook these scrumptious kabobs on the grill.
8 Each Wooden Skewers, soaked in water for 10 minutes, *if grilling soak for 15-20 minutes or use metal skewers
1 Each Chicken Breast, Boneless and Skinless, Cut in 1″ cubes
2 Tablespoons Soy Sauce
1 Tablespoon Oil
1/8 Teaspoon Garlic Powder
1/8 Teaspoon Onion Powder
1/8 Teaspoon Oregano
1/8 Teaspoon Ground Ginger
Marinade for Vegetables, Special Instructions for Mushrooms
4 Cups Vegetables Combine Your Favorite or Use Suggested Below., cut into 1″ pieces
10 grape Tomatoes
6 Mini Sweet Peppers, Stem and Seeds Removed, Cut in Half
1 Green Bell Pepper, Stem and Seeds Removed, Cut Into 1″ Pieces
1 Onion, Quartered. Separated – Leaving 2 – 3 Layers Together
4 Mushrooms, Dry Cleaned and Halved. Set Aside.
2 Tablespoons Oil
2 Tablespoons Balsamic Vinegar
1/8 Teaspoon Garlic Powder
1/8 Teaspoon Onion Powder
1/2 Teaspoon Mccormick Roasted Garlic and Herb Seasoning
Spray Oil
2 Cups Rice, prepared as directed on package

1. Place chicken in a small ziplock bag or in an airtight container. Add in 2 tablespoons soy sauce, 2 tablespoons oil, 1/8 teaspoon garlic powder and onion powder, oregano and ground ginger. Toss until well coated and refrigerate 30 minutes.
2. In a large mixing bowl add vegetables, excluding mushrooms. Add 2 tablespoons oil, balsamic vinegar, 1/8 garlic powder and onion powder and McCormick’s Roasted Garlic and Herb Seasoning.
3. Let sit 10 – 15 minutes.
4. Line a baking sheet with tin foil and spray with oil. Set aside. Raise rack in oven and preheat to 450 degrees.
5. When you are ready to assemble – add mushrooms to bowl of vegetable and toss until well coated.
6. Thread meat and vegetables onto skewers and place them on prepared baking sheet. Repeat until all are done
7. Cook in oven about 15- 20 minutes rotating skewers as necessary to cook evenly.
8. Skewers are done when chicken temperature is 165 degrees.
10. Serve over rice and enjoy!
